Ghee Rice - Vegetable Biryani - This is my version of cooking. its completely different from other cooking methods.Baby basmati gives excellent taste to the dish.When it comes to spices,cloves, cinnamon, black jeera, bay leaves,onions, and green chillies have been used. The main ingredient is yogurt(optional), coriander leaves, ginger garlic paste. The rice is cooked with this mixture in slow process. Ghee rice is very special, plain biryani gives excellent taste with garam masala and ghee flavor. Ghee gives richness to the taste. Variations can be made by adding cashews, almonds,mint. and so on.

Ingredients

Basmati Rice-300gms
Onion-1
Green chillies-2
Ginger Garlic paste-2tbsp
Cumin seeds-1tbsp
Cinnamon-2
Bay Leaves-2
Cardamom-2
Cloves-4
Coriander leaves
Lemon-1
Salt to taste
Oil

Preparation method
Heat ghee in a pan, add washed basmati rice and fry it nicely for the 2 mins. keep it aside.
Heat ghee in a pan,add cumin seeds, cinnamon,cardamom,cloves and bay leaves
Add green chillies and chopped onions and saute it till it reaches golden brown.
Add ginger garlic paste and saute it.
Add the onion mix, coriander leaves, ghee, lemon juice and salt to the rice.
Add 1:2 ratio water and cook it in a normal process..
Ghee rice is ready to serve.
Serve it hot with raita & curry
